Haitian Criollo and Trinitario Blend

This ceremonial cacao paste combines two of the most respected cacao varieties in a single product. Criollo, the rarest cacao variety worldwide, brings refined complexity. Trinitario adds body and depth. Both are grown in Haiti by smallholder farming families who have cultivated these trees for generations.

Since 2012, PISA (Produits Des Iles SA) has been working to give Haitian cacao the recognition it deserves. Before that, Haiti's beans disappeared into the anonymous bulk trade. Now, local families earn fair prices for their harvest, and the exceptional quality of their cacao reaches the specialty market directly.

The Criollo-Trinitario Character

The flavour profile reflects both varieties: rich chocolate notes from the Trinitario base, layered with the delicate fig, floral and caramel accents that Criollo is known for. PISA farmers grow their cacao without chemical fertilisers or pesticides. The beans are fermented and dried locally, then processed in Amsterdam in small batches at low temperatures to preserve the raw compound profile. Theobromine, the primary active compound in cacao, remains fully intact through this cold-processing approach.

The paste format is the traditional form for ceremonial cacao. It contains the full cacao mass, including the butter, which gives it its rich, creamy mouthfeel when dissolved in warm liquid.
