What makes ceremonial cacao paste different?
Ceremonial-grade cacao paste is minimally processed. The beans are fermented, lightly roasted at low temperatures, and stone-ground into a thick paste. No sugar, milk, or additives. This preserves the natural theobromine content and the complex flavour profile that commercial chocolate processing strips away.
Sourcing and origin
We work with specific cacao varieties from Ecuador, Peru, and Mexico. Each origin produces distinct flavour profiles: Ecuadorian Arriba Nacional tends toward floral and fruity notes, while Peruvian Criollo offers deeper, more earthy tones. Wholesale considerations
Cacao paste has a shelf life of 12-18 months when stored below 20 degrees C in a dry environment. It does not need refrigeration but should be kept away from strong odours as cacao absorbs them. Blocks can be broken or grated for portioning.
Chop or grate the paste and melt it slowly in warm water or plant milk (not boiling). A typical ceremonial serving uses 30-42 grams per person. Add spices like cinnamon or cayenne to taste. The paste dissolves fully when stirred consistently.
Cacao paste is the whole bean ground into a block, containing both cacao solids and cacao butter. Cacao butter is just the fat extracted from the bean.
