This 100% raw cacao paste is made from unroasted, cold-pressed Criollo cacao beans from the Peruvian Amazon. Criollo is the rarest of the three main cacao varieties (alongside Forastero and Trinitario), representing less than 5% of global cacao production. Its natural character is characteristically complex: less bitter than Forastero, with subtle fruity and floral notes that cacao connoisseurs prize.

From Bean to Paste

The cacao beans are cold-processed to preserve the full spectrum of naturally occurring compounds, including theobromine, phenylethylamine (PEA), and magnesium. Theobromine is the primary alkaloid in cacao and the compound that gives Theobroma cacao its botanical name, literally 'food of the gods'.
